In his book, Dawson compiles recipes and techniques that will embolden your own recipe development as a brewer, with detailed explanations of why each ingredient is chosen. You’ll learn whether a grain is added for flavor, color, texture, historical accuracy, or a wild whim of experimentation. He’ll teach you the hop profiles that make an IPA taste retro or new wave, and you how to treat yeast for maximum impact.
